This role involves preparing sweet items including pastries, cakes, ice creams, sorbets, fruit compotes, chocolates, and showpieces.
The Responsibilities of a Pastry Prep Cook- Prepare pastry items according to recipe cards, portion, and presentation standards ensuring consistency in quality.
- Start food items that are prepared ahead of time to avoid overestimation of needs.
- Operate, maintain, and clean kitchen equipment such as deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, and waffle iron.
- Date all food containers and rotate stock according to policies.
- Maintain proper temperatures for perishables.
- Check pars for shift use and determine necessary preparation, freezer pull, and line setup.
- Identify out-of-stock items or possible shortages.
- Return unused food items to designated storage areas ensuring proper covering and dating.
- Collaborate with the Culinary Team on planning, ordering, and activities impacting guest satisfaction.
- Maintain focus on taste and consistency when producing food or pastry for guests.
