Job Description

The position is responsible for supervising the overall pastry operation and maintaining the highest standards of food quality and guest satisfaction.

Main responsibilities include, but are not limited to, quality, training, and development of team members.

Primary Responsibilities

Food Quality
  • Monitor food quality and consistency to ensure high standards.
  • Supervise and monitor kitchen operations, including yield testing and product identification, following proper rotation and labelling guidelines.
  • Conduct daily spot checks to ensure efficient use of all food items, minimizing wastage.
  • Work closely with receiving and storeroom to ensure quality and standards are met.
  • Assess freshness, presentation, and temperature of served food.
  • Supervise food tasting sessions.
Cost Control
  • Control food portioning, serving, requisitions, and storage to minimize wastage.
  • Update menu costing and planning as required, including F&B promotions.
Hygiene And Sanitation
  • Maintain personal hygiene and grooming standards per hotel and health regulations.
  • Enforce cleanliness, hygiene, and sanitation standards in kitchens and storage areas.
  • Ensure proper storage of equipment and perishables, avoiding spoilage and contamination.
  • Prevent use of spoiled or contaminated ingredients.
Leadership and Management
  • Supervise colleagues, ensuring approachability and fairness.
  • Assign duties, instruct staff, and communicate with the Executive Pastry Chef.
  • Liaise with other departments to ensure smooth operations.
  • Ensure punctuality and adherence to policies, taking disciplinary actions when necessary.
Training and Development
  • Conduct regular training sessions.
  • Record and submit monthly training hours.
  • Orient new hires and ensure understanding of hotel rules and safety procedures.
Team Relationships
  • Maintain collaborative relationships with colleagues and management.
  • Build guest loyalty and develop relationships with guests and patrons.
  • Seek feedback to improve products and services.
  • Uphold company values and support CSR initiatives.
  • Perform other duties as assigned.

Qualifications

  • Experience in similar roles or luxury/fine dining environments preferred.
  • Trade qualification in culinary arts.
  • Knowledge of food trends, HACCP standards, and procedures.
  • Minimum professional certification in a culinary-related field.
