Responsibilities:
  1. Team Lead: Oversee daily operations, ensuring seamless execution of menus and maintaining Raffles Standard.
  2. Culinary Expertise: Prepare dishes according to business requirements, upholding high-quality standards.
  3. Shift Coordination: Collaborate with your Chef de Partie to organize shifts, mise-en-place, production, and service.
  4. Task Execution: Receive orders from your Chef de Partie and execute tasks accurately.
  5. Daily Requisitions: Work with your Chef de Partie to create daily requisitions for wine, dry store, and kitchen transfers.
  6. Employee Engagement: Foster positive employee relationships and motivate colleagues.
  7. Quality Control: Ensure recipes are followed precisely regarding portion size, quantity, and quality.
  8. Pre-Service Checklists: Complete daily checklists for mise-en-place and food storage.
  9. Communication: Attend daily and monthly meetings with the Chef de Cuisine and Executive Chef/Executive Sous Chef as required.
  10. Maintenance: Report machinery failures and ensure prompt repairs.
  11. Updates: Stay informed about updates on Banquets and organizational information.
  12. Section Cleanliness: Maintain a clean and tidy section.
  13. Shift Handovers: Pass relevant information to the next shift.
  14. Accident Reporting: Record accidents and sickness in the logbook and report to the Executive Chef/Executive Sous Chef.
  15. Supervision: Supervise Commis Chefs regarding personal hygiene and section responsibilities.
  16. Innovation: Assist in developing new recipes and menu ideas.
  17. Company Policies: Adhere to company policies on fire safety, hygiene, and safety protocols.
