Production Manager – Café and Restaurant

Job Responsibilities:

  • Oversee food preparation processes to ensure quality, consistency, and efficiency.
  • Develop and implement standardized recipes, portion control measures, and production guidelines.
  • Ensure compliance with food safety, hygiene, and sanitation standards.
  • Monitor kitchen operations to minimize waste and control food costs.
  • Conduct regular food quality assessments and implement necessary improvements.

Kitchen Operations & Staff Management:

  • Train and supervise kitchen staff, ensuring adherence to company policies and best practices.
  • Work closely with chefs and kitchen teams to optimize workflow and maintain efficiency.
  • Ensure proper staffing levels, scheduling, and labor cost management.

Inventory & Supply Chain Management:

  • Manage procurement of raw materials and maintain inventory control.
  • Establish relationships with suppliers and negotiate pricing to optimize costs.
  • Ensure proper storage and handling of food ingredients to minimize waste.
  • Conduct regular stock audits and coordinate with purchasing teams for replenishment.

Process Improvement & Cost Control:

  • Implement strategies to streamline production processes and improve efficiency.
  • Monitor kitchen budgets and ensure cost-effective use of ingredients and supplies.
  • Analyze production performance and identify opportunities for cost savings.
  • Work closely with the Operations and Marketing teams to develop new menu items.
  • Ensure compliance with local food safety regulations, HACCP, and industry standards.
  • Address production challenges and resolve kitchen-related issues promptly.

Qualifications & Requirements:

  • Education: Bachelor's degree in Culinary Arts, Food Production, Hospitality Management, or related field. Certified in the respective fields (HACCP, etc.).
  • Experience: Minimum of 5+ years in a food production or kitchen management role in the café/restaurant industry.
  • Strong knowledge of kitchen operations, food safety, and quality control.
  • Excellent leadership, organizational, and problem-solving skills.
  • Experience in budgeting, cost control, and inventory management.
  • Proficiency in kitchen management software and POS systems.
  • Ability to work in a fast-paced environment and manage multiple locations.
