Job Title: Assistant Pastry Manager

Job Summary:

We are seeking a highly skilled and experienced Assistant Pastry Manager to join our team. As an integral part of the pastry department, you will be responsible for ensuring the highest standards of food quality and guest satisfaction.

Main Responsibilities:

  • Food Quality:
    • To monitor and maintain the highest standards of food quality, consistency, and presentation in line with hotel specifications.
    • Supervise and monitor kitchen operations, including yield testing, product identification, and proper rotation and labelling of food produce.
    • Conduct daily spot checks to ensure all food items ordered by the kitchen are utilized completely to avoid wastage.
    • Work closely with receiving and storeroom staff to ensure that goods received meet hotel standards.
    • Assess freshness, presentation, and temperature of food served on a regular basis.
    • Supervise food tasting sessions to ensure compliance with hotel standards.
  • Cost Control:
    • Implement effective cost control measures to minimize wastage and optimize inventory management.
    • Update menu recipe costing and planning as required, including F&B promotions.
    • Ensure personal hygiene and grooming adhere to Raffles Hotel Singapore standards, National Environmental Agency standards, and HACCP guidelines.
    • Maintain the highest standards of cleanliness, hygiene, and sanitation in kitchens, including refrigerators, freezers, ceiling, walls, floors, shelving, working tables, and equipment.
    • Ensure all perishable items are stored quickly and efficiently, and ingredients are always fresh and within their expiry date.
    • Prevent using spoiled or contaminated products in any phase of food preparation.
  • Management and Leadership:
    • Supervise the work of colleagues and maintain a fair and approachable demeanor when dealing with culinary matters.
    • Assign specific duties to colleagues, instruct them in their work, and communicate with the Executive Pastry Chef on kitchen management.
    • Liaise with other departments to ensure smooth and professional operation, ensuring all colleagues are on time and policies are followed.
    • Maintain effective communication among kitchens and with other departments.
    • Ensure deadlines are met and goals are achieved.
  • Training and Development:
    • Conduct regular training sessions for colleagues to develop their skills and knowledge on new menu items.
    • Record and submit monthly On-the-Job Training hours to the Chef's Office before the 15th of each month.
    • Guide departmental orientation for new hires.
    • Educate colleagues on hotel rules and regulations.
    • Train colleagues on fire and safety procedures, emergency protocols, and hygiene practices.
  • Guest Satisfaction:
    • Maintain collaborative relationships with colleagues, supervisors, and managers to ensure excellent guest service.
    • Build loyalty and develop professional relationships with local guests and regular patrons.
    • Obtain feedback from guests and patrons to continually improve product offerings.
    • Uphold Accor values of Guest Passion, Trust, Sustainable Performance, Spirit of Conquest, Innovation, and Respect in all interactions.
    • Foster sustainable practices and follow Planet 21 initiatives (Accor's Corporate Social Responsibility program).
    • Perform additional duties and responsibilities as assigned.

Qualifications:

To be considered for this position, you must possess:

Demonstrated experience in a similar role or luxury/fine dining environment.

Sound knowledge of food trends, HACCP standards, and procedures.

A minimum Professional Certificate in a Culinary-related field.
